This new macaroni and cheese recipe I created is filled with toppings from a Seattle hot dog.

Ingredients For seattle macaroni and cheese

1 cgrated Parmesan cheese

1 Tbspolive oil

1 mdvidalia sweet onion, sliced

1 cpickled jalapeno slices

1 lbuncooked elbow macaroni
-
2 3/4 Tbspmargarine, divided
-
1/4 call purpose flour
-
2 cmilk
-
1 cheavy cream
-
1/2 cpickled jalapeno liquid
-
8 ozmonterey jack cheese, shredded
-
8 ozcream cheese, softened
-
1 cpanko bread crumbs
How To Make seattle macaroni and cheese

1Preheat oven to 350 degrees F.

2Coat a 13- x 9-inch baking dish with cooking spray. Add shredded Parmesan cheese.

3Heat olive oil in a large skillet over medium heat. Add sliced vidalia onion and jalapeno slices and saute for 8 minutes until tender. Remove from heat and set aside.

4Cook macaroni according to package directions; drain.

5Melt 2 tablespoons margarine in a large saucepan over medium heat. Gradually whisk in milk, heavy cream and jalapeno liquid until smooth; cook, whisking constantly, 8 to 10 minutes or until slightly thickened. Whisk in monterey jack cheese and cream cheese until smooth.

6Remove from heat and stir in sauteed onion mixture and macaroni.

7Pour macaroni mixture into the prepared baking dish. Stir in breadcrumbs and remaining margarine with the macaroni mixture.

8Bake in the preheated oven for 30 minutes or until golden and bubbly. Let stand for 5 minutes before serving.
