Ingredients For maddy's creamy mushroom orzo

1 small boxfresh mushrooms (any kind)

1 smwhite onion sliced

1 1/2 Tbspolive oil

1 tspsalt

1 tsppepper

1/2 tspdried oregano
-
2 tspchopped garlic

1 3/4 cchicken stock
-
1 corzo pasta
-
1/2 c1/2 and 1/2

3/4 cfrozen peas

1/2 cparmesan cheese

2 Tbspsoftened butter
How To Make maddy's creamy mushroom orzo

1Slice onions and mushrooms. On medium heat, fry the mushrooms and onions in the olive oil until they are tender. Add the oregano, garlic, salt and pepper and fry for one minute more.

2Turn the heat down to simmer. Add the Orzo, chicken stock and 1/2 and 1/2 to the pan. Simmer uncovered until the pasta is al dente...about 20 minutes. If not done after this time, add a bit more stock.

3When the pasta is done, turn off the heat. Stir in the parmesan cheese and peas. Stir in 2 tablespoons of soft butter and serve.
