There is nothing like a good portion of this dish to round out any meal. Even better when prepared with fresh tomatoes out of the garden in summer!

Ingredients For macaroni and tomatoes

  • 2 c
    elbow macaroni, cooked
  • 1 can
    14.5 oz. petite diced tomatoes
  • 1 can
    14.5 oz. whole tomatoes in juice
  • 1 Tbsp
    bacon grease (can add more)
  • 1/2 tsp
    pepper
  • salt to taste

How To Make macaroni and tomatoes

  • 1
    Prepare macaroni in boiling, salted water according to package direction. Drain
  • 2
    Return pasta to cooking pot and add the diced tomatoes. Break up the whole tomatoes in juice and add to pot.

    Add bacon grease, salt and pepper. Stir together well and simmer for about 15 minutes.
