Turmeric has been touted lately as a very healthy ingredient. I found this in a Greek recipe book in the library, took a picture with my phone. Decided to clear out my old photos and found this. Don't remember the title of the book :(

Ingredients For golden orzo with greek dressing

1 tspturmeric

1 lborzo pasta, uncooked

1/2 colive oil, extra virgin

1/4 tspwhite pepper
-
1 tspsalt

1/2 cparsley, finely minced

1/8 clemon juice
-
1 Tbspcapers, drained

1/2 tspsugar
-
1 csun dried tomatoes, julienned

1/2 ckalamata olives, chopped

1 cfeta cheese, crumbled
How To Make golden orzo with greek dressing

1Bring salted water to a boil. Add turmeric and orzo. Cook for 10 minutes, or until done, drain and rinse orzo. Place in serving bowl and let cool slightly while mixing dressing.

2Combine other ingredients except olives, tomatoes and feta. Whisk together until oil is emulsified.

3Add olives, tomatoes. Stir to combine. Sprinkle feta on top before serving. Can be chilled or served at room temperature.
