Ingredients For fettuccine with two cheese sauce & nutmeg

8 ozfresh fettuccine pasta

salt
- SAUCE
-
2 Tbspbutter
-
1 chalf and half
-
3/4 cparmigiano-reggiano shredded

1 cmonterey jack
-
salt and fresh cracked pepper

1/2 tspfreshly grated nutmeg

fresh chopped parsley
How To Make fettuccine with two cheese sauce & nutmeg

1Place a large pot of water over high heat. Bring to a rolling boil. Add the salt and bring back to a rolling boil. Add the fresh pasta and reduce the heat. Boil about 3 minutes. Drain and reserve 1 cup pasta water.

2To make the sauce Place a saucepan big enough to accommodate the pasta. Add the butter and let it melt.

3Add the half and half and nutmeg. Bring to a gentle simmer. Slowly add in the Parmigiano cheese whisking constantly to let it melt. Add the Jack cheese and keep whisking until cheese is melted. Whisk in 1/2 cup of pasta water. Add the pasta and stir letting it cook in the sauce a little more. Add more pasta water if to dry.

4Taste and season with salt and pepper. Stir in the parsley. Serve immediately
