Ingredients For faux mashed potatoes

  • 1 lg
    large fresh cauliflower
  • 1 c
    salt free chicken broth
  • 4 oz
    light cream cheese
  • 1 tsp
    salt
  • 1/2 tsp
    pepper
  • 1 Tbsp
    butter

How To Make faux mashed potatoes

  • 1
    Cut cauliflower into florets.

    Cook in medium pot with chicken broth until tender.
  • 3
    Drain and add remaining ingredients and mash.
