cranberry macaroni and cheese

I created this new macaroni and cheese recipe. It's an extreme one, combining cranberries with caramelized onions. It's picture perfect with a baked whole chicken and a glass of iced cranberry juice.

Ingredients For cranberry macaroni and cheese

  • 16 oz
    elbow macaroni
  • 3 Tbsp
    margarine, divided
  • 1 md
    red onion, sliced
  • 2 c
    sliced fresh cranberries, divided
  • 3/4 c
    dark brown sugar
  • 1 c
    heavy whipped cream
  • 1 can
    evaporated milk
  • 8 oz
    cream cheese, softened
  • 1 c
    half and half
  • 2 c
    shredded smoked gouda cheese, divided
  • 1 c
    shredded sharp cheddar cheese
  • 1 c
    shredded Parmesan cheese

How To Make cranberry macaroni and cheese

    Preheat oven to 350 degrees F.

    Fill a pot with lightly salted water and bring to a boil. Add macaroni and return to a boil. Cook, stirring occasionally until the macaroni has cooked through, but is still firm to the bite, about 8 minutes; drain.

    Heat 1 tablespoon margarine in a large, deep skillet over medium heat. Add sliced red onion and saute for 5 minutes.

    Stir in 1 cup sliced cranberries and brown sugar; saute again for 3 minutes or until tender. Set aside.

    Heat remaining margarine in a medium saucepan over medium-low heat. Add heavy whipping cream, evaporated milk, cream cheese, half and half and remaining sliced cranberries; mix well until combined.

    Let it simmer for 6 minutes on low heat until thickened. Stir in 1 cup shredded gouda cheese, the sharp cheddar cheese and Parmesan cheese into the cranberry cream sauce mixture. Remove from heat.

    Add cooked macaroni and sauteed onion mixture into a 9x13-inch baking dish. Pour cranberry cream sauce mixture in and stir together until blended.

    Sprinkle with remaining shredded gouda cheese. Bake for 25 minutes or until golden brown.
