I wanted to do something different with my couscous than the lemon and roasted almonds so I came up with salad and it is good cold or warm.

Ingredients For couscous salad

1 boxplain couscous

2 cchicken broth
-
1/2 pkgcherry tomatoes sliced

1 smcan chopped black olives
-
1 smcan shitaki mushrooms, or use fresh, sliced

1/3 ctoasted pinenuts

1 Tbspbutter
-
1 Tbspolive oil
-
1 Tbspcapers
-
juice of 2 limes
-
zest of 1 lime

3 Tbspbasil pesto

olive oil to drizzle in pasta when mixing
How To Make couscous salad

1Cook couscous in chicken broth according to package, when done fluff with fork. Saute mushrooms in butter and olive oil until tender and brown, chop. Add mushrooms and all other ingredients to couscous and mix well.
