I wanted to do something different with my couscous than the lemon and roasted almonds so I came up with salad and it is good cold or warm.

Ingredients For couscous salad

  • 1 box
    plain couscous
  • 2 c
    chicken broth
  • 1/2 pkg
    cherry tomatoes sliced
  • 1 sm
    can chopped black olives
  • 1 sm
    can shitaki mushrooms, or use fresh, sliced
  • 1/3 c
    toasted pinenuts
  • 1 Tbsp
    butter
  • 1 Tbsp
    olive oil
  • 1 Tbsp
    capers
  • juice of 2 limes
  • zest of 1 lime
  • 3 Tbsp
    basil pesto
  • olive oil to drizzle in pasta when mixing

How To Make couscous salad

  • 1
    Cook couscous in chicken broth according to package, when done fluff with fork. Saute mushrooms in butter and olive oil until tender and brown, chop. Add mushrooms and all other ingredients to couscous and mix well.
