Aren't noodles great, they are so versatile, there is so much you can do with them? Did you know that they are seasonal; they are perfect served cold in the summer and in soups or stews in the winter? Try these tasty noodles with; the garlic dressing, soy sauce and rice wine vinegar, hot sauce, or with chili sauce or chive dressing. These noodles are wonderful served with the dressing and fried onions, but you can also add stir fried meats or vegetable to this lovely dish for a filling meal.

Ingredients For cold noodles

  • garlic dressing: 8 cloves of garlic, minced
  • 2 tbsp oil, vegetable
  • 1/2 tsp salt
  • fried onions:1/2 large onion, quartered, thinly sliced
  • 1/8 cup oil, vegetable
  • noodles: 1 lb soba noodles, thin
  • 1 tsp oil
  • 1/4 tsp hot chili powder (optional)
  • 1/2 tsp salt (optional)
  • chives (garnish)

How To Make cold noodles

  • 1
    Garlic dressing: Add the minced garlic to a small bowl with a pinch of salt and stir. In a small pot heat the oil and pour the hot oil over the garlic and salt mixture. It is easy to dilute; add a little boiling water and mix well.

    Fried onions: Heat a 1/8 cup of oil in a small pan and fry the onions until they are a nice golden brown. Drain them and cool before using.

    Noodles: Cook the pasta according to its packaging instructions. Drain and add a little oil, chili powder and salt and mix well and let cool until ready to serve. When ready to serve add the fried onions, mix well and garnish with chives.

    To serve: Put the noodles in a bowl and place on the table with your assorted condiments and vegetable and meat. (if using) To your portion of noodles add your choice of condiments.
