Based on the viral TikTok feta tomato pasta, I created this delicious recipe with chorizo and macaroni. It's good with roast chicken.

Ingredients For chorizo and macaroni with feta and tomatoes

1 Tbspavocado oil

9 ozsoft Mexican chorizo, casing removed and crumbled

1 lgvidalia sweet onion, peeled and sliced

16 ozdry elbow macaroni

2 cshredded Parmesan cheese, divided

1 tspdried basil
-
2 tspgarlic pepper
-
2 ptcherry tomatoes

1 Tbspsea salt mixed with black pepper

8 ozblock feta cheese
How To Make chorizo and macaroni with feta and tomatoes

1Preheat oven to 350 degrees F.

2Heat avocado oil in a large, deep skillet over medium heat. Add crumbled chorizo and saute for 5 minutes until crisp. Reduce to low heat and stir in sliced vidalia onion.

3Remove from heat, reserving chorizo grease in 3/4 cup and set aside.

4Fill a large pot with lightly salted water and bring to a boil. Stir in macaroni and return to a boil.

5Cook,stirring occasionally, about 8 minutes; drain. Transfer to a large bowl and add 1 cup shredded Parmesan cheese, dried basil and garlic pepper; mix well.

6Place cherry tomatoes, sea salt/black pepper and chorizo grease in a 8-inch casserole dish. Add the block of feta cheese in the center of tomato mixture.

7Bake in the preheated oven for 35 minutes.

8Remove from the oven and cool completely. Mash with a fork for 40 seconds. Add crumbled chorizo and macaroni mixture and mix well until combined. Sprinkle with remaining Parmesan cheese.
