This was always a favorite with my kids.....I really enjoyed it with pork or beef.

Ingredients For cashew noodles

  • 8 oz
    dry medium egg noodles
  • 2 Tbsp
    butter
  • 1 1/2 c
    small curd cottage cheese
  • 8 oz
    carton sour cream
  • 1/2 c
    fresh mushrooms, chopped
  • 1/2 c
    cashew halves
  • 1/4 c
    green onions, chopped
  • 2 Tbsp
    dry sherry
  • 1 Tbsp
    soy sauce
  • 1 clove
    garlic, minced
  • 1/8 tsp
    ground red pepper
  • 1/2 c
    romano cheese, grated

How To Make cashew noodles

  • 1
    Cook noodles according to the package directions; drain well. Combine the noodles and butter in a large bowl, stirring gently until the butter melts. Set aside.

    Combine the cottage cheese and next 8 ingredients in a medium bowl, stir well. Add the cottage cheese mixture to the noodle mixture; toss gently.

    Pour into a buttered 2 quart casserole dish. Sprinkle with Romano cheese. Bake uncovered, at 350° for 25 minutes or until thoroughly heated.
