It was so much fun coming up with a mac & cheese with my daughter Danielle for my BD dinner. We used a special Italian pasta called Lumaconi from Italy. I found it at Big Lots. We used 3 different cheeses and milk. It was amazing!!

Ingredients For birthday mac & cheese for kimijo

  • 1
    bag of lumaconi pasta
  • 4 c
    milk
  • 4 Tbsp
    cornstarch mixed in with a 1/2 cup of cool water
  • 4 c
    shredded cheddar cheese
  • 2 c
    shredded mozzarella cheese
  • 1 c
    cubed velvetta
  • 1-2 tsp
    prepared mustard
  • 1 tsp
    garlic powder
  • salt & pepper to taste

How To Make birthday mac & cheese for kimijo

    In boiling salted water cook pasta aladenti. Meanwhile in a lg saucepan add milk, stirring constantly on medium heat. Add in cornstarch mixture to thicken. Add mustard, garlic & salt & pepper. If need be add more salt, pepper, mustard & garlic. We taste along the way. Add cheeses (reserving one cup of both cheddar and mozzarella), till nice and melted and creamy. Drain pasta; in the lg pot put back in the pasta & cheese sauce; mix well. On top of pasta spread the cheeses, cover and bake at 375f for 40 minutes. Remove foil to brown on top.
