Excellent side dish for any main coarse or it could be served as a main dish. I like to pair it with grilled or blacked salmon.

Ingredients For angel hair pasta with tuscan parmesan sauce

  • 1/2 lb
    angel hair pasta
  • 1 1/2 c
    pasta water
  • 2 tsp
    better than bullion chicken
  • 3 Tbsp
    butter
  • 2 tsp
    minced garlic
  • 1/8 tsp
    red pepper flakes
  • 2 tsp
    onion flakes, dehydrated
  • 1 Tbsp
    tuscan spice blend
  • 1 c
    heavy cream
  • 1/2 c
    parmesan cheese grated
  • 1 sm
    zucchini, cubed
  • 1 sm
    yellow squash, cubed
  • 1 c
    mushrooms, sliced
  • 2 tsp
    minced garlic
  • 6-7
    cherry tomatoes, halved
  • 1 pkg
    baby spinach
  • olive oil

How To Make angel hair pasta with tuscan parmesan sauce

    Cook pasta according to directions. Reserve 1 1/2 cups pasta water and stir in chicken bullion until dissolved. Drain pasta. Set them aside.

    In a heavy sauce pan, on med-high heat, melt butter. Add garlic, onion flakes, red pepper flakes, and Tuscan seasonings. Stir for a minute and add 1 cup of pasta water with chicken bullion and heavy cream.

    Heat to almost to a boil. Reduce heat to low and stir in grated parmesan cheese. Sauce should have a slight coat to the back of spoon. If not add a little more cheese. Stir until all cheese is melted Taste add salt or spices if needed. Set aside.

    In a large skillet, heat a few tablespoons of olive oil over med-high heat. Add zucchini, yellow squash, mushrooms and garlic. Cook and stir vegetables until just tender. Add tomatoes and baby spinach cook until spinach is wilted. Sprinkle some Tuscan spice and grated cheese.

    Add pasta to the vegetable mixture and toss together. Spoon sauce over pasta, while gently mixing until everything is incorporated
