Ingredients For zucchini fried apples

  • 6 c
    zucchini, peeled and sliced
  • 3 Tbsp
    lemon juice
  • 2/3 c
    sugar or 4 tablespoon plus 2 tsp splenda
  • 3/4 tsp
    cinnamon or use apple pie spice
  • 2 Tbsp
    cornstarch, with just enough water to mix it, to thicken the zucchini
  • 2 Tbsp
    butter
  • 1 tsp
    vanilla

How To Make zucchini fried apples

    Peel your zucchini, slice down the middle and scrape out all the seeds. Slice like an apple slice, but not too thin
  • 2
    Combine zucchini, lemon juice, sugar or sweetener, and cinnamon until well coated.

    Melt butter in a skillet on medium high heat, add coated zucchini and cook on high for 5-6 minutes, stirring every 30 seconds, until liquid cooks down to a bubbly brown syrup

    Stir in vanilla extract and cornstarch thickener, then cook to there is almost no liquid in the pan and zucchini is a little softer.
