Ingredients For zucchini fried apples

6 czucchini, peeled and sliced

3 Tbsplemon juice

2/3 csugar or 4 tablespoon plus 2 tsp splenda

3/4 tspcinnamon or use apple pie spice

2 Tbspcornstarch, with just enough water to mix it, to thicken the zucchini

2 Tbspbutter

1 tspvanilla
How To Make zucchini fried apples

1Peel your zucchini, slice down the middle and scrape out all the seeds. Slice like an apple slice, but not too thin

2Combine zucchini, lemon juice, sugar or sweetener, and cinnamon until well coated.

3Melt butter in a skillet on medium high heat, add coated zucchini and cook on high for 5-6 minutes, stirring every 30 seconds, until liquid cooks down to a bubbly brown syrup

4Stir in vanilla extract and cornstarch thickener, then cook to there is almost no liquid in the pan and zucchini is a little softer.
