Ingredients For veggie couscous

  • 3 c
    boiling water or stock
  • 1/2 tsp
    cinnamon, ground
  • 1/2 tsp
    cumin
  • 1 Tbsp
    honey
  • 1 Tbsp
    lemon juice
  • 3 c
    quick cooking couscous
  • 2 tsp
    olive oil
  • 1 sm
    onion, finely chopped
  • 1 sm
    carrot,finely chopped
  • 1/2
    sweet red pepper, finely chopped
  • 1 sm
    zucchini, finely chopped
  • 1/3 c
    currants or raisins
  • s & p to taste
  • 3 Tbsp
    finely chopped fresh cilantro or basil

How To Make veggie couscous

    In a saucepan or large measuring cup, combine boiling water with the cinnamon, cumin, honey and lemon juice. Place the couscous in a large pot. Pour the boiling water mixture over top and stir in. Cover tightly for 10 mins. In a large skillet heat the oil on medium heat and add chopped veggies and currants. Cooke gently for 5 - 10 mins until very tender.

    Fluff couscous with a fork and and stir in veggies. Season with s&p . Stir in cilantro and serve.

    NOTE: If using quick cooking whole wheat couscous use 4 1/2 cups of water or stock.
