uncle tommy's baked beans

I have a dear friend in Louisiana who's Uncle Tommy experiments with recipes in his garage. He set up a little cooking area with a stove and counters. He's a good ole' boy who feels he should keep his cooking fantasies (other than BBQing), a secret from the rest of the guys he knows. This is his recipe for just about the best beans one man can make!

Ingredients For uncle tommy's baked beans

1/2 lbbacon (cut into small pieces)

1/2 lgsweet onion chopped

55 ozbush's baked beans (original)

1 1/2 tspyellow mustard
-
12 ozchili sauce (bottled)
-
1/2 cjack daniels
-
1 tspinstant coffee powder
-
12 ozcrushed pineapple
-
1/4 cbrown sugar
How To Make uncle tommy's baked beans

1In a large cast iron frying pan, cook bacon on med high until fat appears in pan. Add onions.Cook both together until onions are browned. Bacon is semi crisp. Set aside.

2In a large stew pot on medium heat add Bush's baked beans, OR (if your iron skillet is big enough drain the bacon fat,leave the onions and bacon in the pan. Add the remaining ingredients). Stir in onions and bacon and the rest of the ingredients.

3Increase to medium/high heat. Bring to a gentle boil. Stirring occasionally so the beans don't stick and the flavors blend. Reduce heat back to medium for remaining 10 minutes.

4Serve um up! Uncle Tommy would want you to really enjoy his Baked Beans! He always served them with laughter.
