This may sound strange, but it's really very good. My aunt used to serve it at Christmas, and my mother would make it about every couple of weeks because it was one of the few vegetables us kids would eat. My father loved it; I guess his mother used to make it for him. When I fix it again I'll post a picture.

Ingredients For tomato pudding

2 canwhole tomatoes

1/3 cpacked brown sugar

4 slicebread, buttered and cut into cubes

2 slicebread, buttered and cut into halves

2 Tbspbrown sugar
How To Make tomato pudding

1Preheat oven to 350 degrees.

2Stir together the tomatoes, 1/3 cup brown sugar, and the bread cubes. Pour into a buttered loaf pan (glass is best, but metal will also work).

3Top with the sliced and buttered bread halves and sprinkle evenly with the remaining brown sugar.

4Bake for 35-45 minutes, until bread on top is nicely browned, puffy, and crisp. Let it get good and brown.
