Ingredients For the real deal cuban black beans

1-14oz pkgdry black beans

5 cwater
-
1 lggreen pepper
-
1 smonion
-
3 clovegarlic
-
1bay leaf
-
1/2 tspcumin powder
-
1 smoregano leaf or 1/2 teaspoon of dried

1 tspsugar
-
1 tspvinegar
-
1 slicetocino ( salted pork)
-
1/2 tspsalt (adjust to taste)

1 small jarroasted red peppers
-
2 Tbspolive oil
How To Make the real deal cuban black beans

1This recipe requires a pressure cooker, however you can make without one...just need to cook a lot longer.

2place the package of black beans in the pressure cooker, cover with the 5 cups of water, let soak at least 5 hours

3after the soaking, bring to boil, cut the whole pepper in half and clean out the inside, put in the pressure cooker along with the bay leaf. pressure cook for about 20-30 mins.

4in the meantime... you are going to make a "sofrito" 2 tablespoons of olive oil,finely diced onion, cut up "tocino" (salted pork) and garlic...

5after pressure is released, open and add the "sofrito" to the soften beans...continue boiling at a gentle boil..add the oregano, cumin, salt, sugar, vinegar, roasted red peppers...simmer about an hour, stirring occasionally as to not stick at the bottom. Should be nice and thickened...Yum
