Taboulleh makes a great side dish or salad

Ingredients For tabbouleh

  • 1 c
    fine bulgur
  • 1 c
    boiling water
  • 3 c
    finely chopped fresh parsley
  • 1/4 c
    finely chopped fresh mint
  • 1/4 c
    minced scallions
  • 2 md
    tomatoes seeded and diced
  • 1 md
    cucumber seeded and diced
  • 1/2 tsp
    salt
  • 1/4 tsp
    ground cumin
  • 1/4 tsp
    ground pepper
  • 3 Tbsp
    lemon juice
  • 3 Tbsp
    olive oil

How To Make tabbouleh

  • 1
    Combine bulgur and boiling water and soak for 1 hour. Drain well and squeeze out any excess water.

    In a large bowl, combine bulgur, parsley, mint, scallions, tomatoes, cucumber, salt, cumin, black pepper and lemon juice. Chill for 1 hour.

    Immediately before serving, add olive oil and stir well
