side o' cowboy beans
A BBQ is not complete unless you have a side of beans. That's my story, and I'm stickin' to it. This recipe makes a small batch for 4. It can be easily doubled or tripled for a larger yield. These beans have a bit of a bite from the Tabasco Sauce, and are not particularly sweet. The addition of Whiskey just seems right for anything "Cowboy". This is an easy recipe. Once in the oven, they don't require much attention, so you are free to attend to your main dish. I have given the option to substitute olive oil for the bacon fat, for Vegan and Vegetarian Diets.

Ingredients For side o' cowboy beans

1 can15 oz beans, undrained (pinto, black, or kidney)

1/4 mdonion, chopped

1 mdcarrot, peeled and grated

2 clovegarlic, large

1/4 tspsalt

1/4 tspblack pepper

1/4 tspdry oregano

1/2 tspground cumin
-
1/2 tsptabasco sauce

2 Tbspketchup
-
2 Tbspbourbon or whiskey

1 Tbspdark brown sugar
-
2 tspbacon fat, if vegetarian use olive oil
How To Make side o' cowboy beans

1Combine all ingredients in a large mixing bowl. Mix well.

2Transfer beans to a crock or other baking dish.

3Bake uncovered at 325 degrees for 1 hour 30 minutes. Stir a few times. Serve hot. Serves 4.
