2 1/2 lbRusset potatoes

1 lgyellow onion

4 ozGruyere cheese, shredded

4 ozmild Swiss cheese, shredded

2 cheavy cream

1 tspdried thyme
-
1 tspgranulated garlic

8-10 slicebacon

1 tsppepper
-
1 tspsalt
How To Make scalloped potatoes with bacon

1Preheat oven to 350 degrees F. Peel the potatoes. Using a mandolin, slice the potatoes and the onion very thin. Set aside.

2In a small saucepan, melt 3/4 of the shredded Gruyere and Swiss into the heavy cream. Add the thyme and garlic.

3Fry the bacon in a skillet until crisp, but not overcooked. Crumble into pieces.

4In a baking dish, layer the potatoes, onions, and a small amount of bacon. Season each layer with salt and pepper. Continue layering until all potatoes, onion, and bacon, are used.

5Pour the cream and cheese over the entire thing. Finish the top with the last amount of grated cheese.

6Cover the dish and bake for 1 hour and 15 minutes until most of the liquid has been absorbed.

7Uncover and continue cooking until the top is browned to your satisfaction!
