Ingredients For saffron couscous with peas and chives

  • 2 c
    chicken stock
  • 1 1/2 c
    frozen peas
  • 2 Tbsp
    butter
  • 1/4 tube
    saffron threads
  • 1 1/4 c
    couscous
  • 1/4 c
    fresh chives chopped

How To Make saffron couscous with peas and chives

    Add the broth to a medium saucepan. Bring to a boil. Reduce heat to a simmer and add the peas and cook 3 minutes. With a slotted spoon remove the peas to a plate.

    Add the butter and saffron to the broth. Bring back to a boil whisking until butter is melted. Stir in the couscous and place a cover over the pan and remove from heat.

    Let stand about 5 minutes until the liquid is absorbed. Fluff with a fork and stir in the peas and chives. Serve
