Refried beans are ok straight from the can, but I wanted to make them a little fancier! You can replace the yogurt with sour cream. Either fat-free or regular refried beans will work.

Ingredients For refried beans up a notch

1 tspolive oil
-
1/4 cchopped poblano or jalapeno pepper

1/4 cchopped onion
-
1 canrefried beans (15 oz or so)

2 Tbspplain greek yogurt or sour cream

1/2 cshredded mexican cheese mix, divided

hot sauce, to taste

green onion and/or cilantro, chopped, for garnish
How To Make refried beans up a notch

1Heat oil, add peppers and onion. Saute until onion is transluscent.

2Add beans, yogurt and half of the cheese. Stir together and heat until cheese has completely melted.

3Sprinkle with rest of cheese, chopped green onion, cilantro and hot sauce to serve.
