I had a taste for roasted potatoes. I used only items I had on hand. I must say I was impressed and will be making these again! Hope you like them too. Note: Since I gauged the ingredients, you can adjust to your taste preference. NOTE: I've made these again a few times and can suggest for a shorter baking time, you can par-boil the potatoes first: Place potatoes in a pot of water with salt until water begins to boil, shut off and let sit in the hot water for about 20 minutes. Rinse and let cool before cutting into cubes. This will cut your baking time by about 15-20 minutes.... ENJOY!

Ingredients For red roasted potatoe's with parmesan cheese

  • 6-8 lg
    red potatoes
  • 1/2 c
    olive oil or almond oil
  • 1/3 c
    rice vinegar
  • 1/2 tsp
    salt and pepper ( lemon pepper)
  • 1/4 tsp
    celery salt
  • 1 tsp
    crushed rosemary
  • 1/4 tsp
    cayenne pepper
  • 1 tsp
    trader joe's 21 seasoning salute ( or any season all)
  • 1/3 c
    cilantro ( fresh & chopped)
  • 2 Tbsp
    crushed garlic
  • 1/2 c
    red onion (chopped)
  • 1 pinch
    nutmeg
  • 1/2 c
    parmesan cheese
  • 1/2 c
    french fried onions

How To Make red roasted potatoe's with parmesan cheese

    Wash/scrub(leaving as much of the skin on as possible), potatoes Cut potatoes into large cubes, set aside. In a large bowl, mix all ingredients until well blended. Add potatoes and stir until well coated.

    Spray/coat with oil or line with aluminum foil (for easy clean up!), a large baking pan or dish. I used a 13x9 baking dish.

    Cover and bake at 375 degrees for 45 minutes. Add parmesan cheese and French fried onions, mix or leave on top. Finish baking 15 more minutes uncovered
