I always make these for Easter...but I often get asked to make them throughout the year.

Ingredients For red beets eggs

  • 24
    eggs, hard boiled
  • 2 can
    sliced beets
  • 1 c
    sugar
  • 1 c
    vinegar
  • dash of salt
  • dash of pepper

How To Make red beets eggs

  • 1
    Put eggs in jar. Cover with red beets and beet juice. Set aside.

    In medium saucepan, combine vinegar, sugar, salt, and pepper. Cook until sugar dissolves and the mixture comes to a boil. Pour over eggs and beets. Gently stir so all the eggs are covered. Let stand for 2-3 hours and refrigerate.
