Ingredients For quinoa summer salad

  • 1 c
    quinoa, pre-soaked
  • 2 c
    cold water
  • ground Himalayan pink salt, to taste
  • 1 c
    diced smoked ham
  • 1 c
    peeled, quartered and sliced cucumbers
  • 1 c
    mixed cherry tomatoes, washed and halved
  • 1/3 c
    diced red peppers
  • 1/3 c
    diced orange peppers
  • 1/3 c
    diced red onions
  • 1 can
    corn kernels, drained (15 oz./432 g)
  • 1 can
    sliced black olives, drained (2.25 oz./64 g)
  • 1 c
    feta cheese, crumbled
  • 2 Tbsp
    chopped cilantro, for garnish

How To Make quinoa summer salad

    In a saucepan, add drained quinoa, cold water and sea salt. Stir well and bring the mixture to a boil.

    Cover, reduce to low and cook for 15 minutes.

    Remove from the heat and let it rest, covered, for 8 minutes before transferring to a large salad bowl.
  • 4
    Add the remaining ingredients and gently toss until mixed. Garnish with cilantro and serve immediately.
