Ingredients For quinoa summer salad

1 cquinoa, pre-soaked

2 ccold water
-
ground Himalayan pink salt, to taste

1 cdiced smoked ham
-
1 cpeeled, quartered and sliced cucumbers
-
1 cmixed cherry tomatoes, washed and halved
-
1/3 cdiced red peppers
-
1/3 cdiced orange peppers
-
1/3 cdiced red onions
-
1 cancorn kernels, drained (15 oz./432 g)

1 cansliced black olives, drained (2.25 oz./64 g)

1 cfeta cheese, crumbled
-
2 Tbspchopped cilantro, for garnish
How To Make quinoa summer salad

1In a saucepan, add drained quinoa, cold water and sea salt. Stir well and bring the mixture to a boil.

2Cover, reduce to low and cook for 15 minutes.

3Remove from the heat and let it rest, covered, for 8 minutes before transferring to a large salad bowl.

4Add the remaining ingredients and gently toss until mixed. Garnish with cilantro and serve immediately.
