pickled red onions

I was browsing through some of the blogs I follow and came across this recipe on www.acouplecooks.com. I love onions and have been craving vinegar-y flavors so WOW did this sound good. My hubby went wild over it and now has the idea that I will make enough to go in those big pickle jars. Hmmmm....he may have a good idea. I initially made them wrong (I didn't pay full attention to what I was doing) and used 1 c. of the vinegar instead of 1/2 c. I like the full cup better. I also never added water so it was full strength but it was wonderful as is, so I am not messing with perfection.

Ingredients For pickled red onions

    red onion
  • 1/2 c
    apple cider vinegar
  • 1 Tbsp
    honey
  • 1 1/2 tsp
    kosher salt
  • 1 c
    water

How To Make pickled red onions

    Thinly slice the onion Wisk together the vinegar, honey, salt, and water Put the onions in a jar and pour the vinegar mixture over the onions. Let the onion mixture sit on the counter for around an hour.

    Adjustments I have made to the recipe: Double the vinegar and omit the water.
