A personal favorite of mine! We have a lot of fish frys in the south & this was always a request by all. Original recipe called for cornmeal instead of cornmeal mix, but the texture & flavor is so much better with the mix.

Ingredients For peggi's homemade hushpuppies

1 1/2 c. white cornmeal mix

1/2 c. sifted flour

2 tsp. baking powder
-
1 sm. onion, finely chopped
-
3 pickled jalapenos, chopped
-
2 tbsp. sugar
-
1/2 tsp. salt
-
1 egg, beaten
-
3/4 c. milk
-
oil for deep frying
How To Make peggi's homemade hushpuppies

1Sift dry ingredients together into large bowl. Add onion, jalapeno,& egg and milk. Stir until just mixed.

2Roll into the size of walnuts & drop into hot deep fat. Fry until golden brown. Drain on absorbent paper. Serve hot with fresh butter.

3NOTE: I usually make up 2 batches of the dried ingredients & keep in airtight container in freezer & when I fry fish, I just get out a couple of Tablespoons & add a little onion & jalapeno & then pour in enough of my egg /milk mixture for right consistency for rolling, since I'm the only one eating them now.
