While this recipe contains no sugar, there is a tangy citrus flavor throughout. The flavor of the cilantro is melded nicely. My family had this salad and loved it. Some of my children have cut way back on their sugar intake so this worked out very nicely. It also makes the recipe more acceptable to diabetics. It is one of my "go-to" recipes. This salad makes a good accompaniment to fish and chicken entrees. It is also good with burgers and sandwiches. It is a great snack or lunch on its own.

2 canblack beans, washed and drained

1 cansweet yellow corn

1 mdcucumber, peeled and diced

1 mdsweet pepper, yellow or red, diced

zest of 1 lime

juice of 1 lime

zest of 1 lemon

1/2 cfresh cilantro, small pieces
How To Make no sugar black bean and corn salad

1Thoroughly Rinse and Drain beans

2Add drained can of corn

3Chop cucumber and sweet pepper

4Stir bean and vegetables well.

5Zest lime and lemon, Add zest to bean and vegetable mixture.

6Add juice of lime and lemon to mixture. Stir thoroughly.

7Add cilantro and stir.
