3 Tbsppickling spice, in a cheesecloth bag

How To Make mum's green tomato pickles

1Slice tomatoes and onions and arrange in layers in an enamel canner with a generous sprinkling of picking salt between each layer. Let stand overnight.

2In the morning drain and wash the contents very thoroughly with cold water and return to rinsed out canner.

3Tie all spices in a cheesecloth bag and boil with the vinegar and sugar then add to the tomato and onions in the canner.

4Boil gently until most of the liquid has gone, about an hour. Remove spice bag. Ladle tomatoes in sterilized jars and seal.
