Ingredients For lemon couscous

2 Tbspolive oil

1 lgclove garlic, pressed

1 1/4 clow-sodium chicken broth
-
1/4 cfreshly squeezed lemon juice

1 tsplemon zest
-
1 pinchground himalayan sea salt
-
1/4 tspfreshly ground black pepper, or to taste (i always use mixed peppercorns)

1 cmoroccan couscous

1 Tbspparsley, finely chopped
How To Make lemon couscous

1In a medium saucepan over medium heat, add oil and when it gets hot, add garlic and sauté for 30 seconds.

2Pour in chicken broth, lemon juice, lemon zest, salt and pepper; stir well. Increase the heat to high and bring the mixture to a boil.

3Add couscous, stir very well, cover and remove from the heat. Let it rest for 5 minutes.

4Add parsley and fluff it with a fork. Serve immediately.
