This is a very quick and easy salad. I love the flavor that grilling the corn adds, but if you can not grill you can add a can of corn. Goes great with a veggie burger or any burger for that matter.

Ingredients For grilled corn salad

  • 1 1/2-2 c
    grilled corn (about 2 ears)
  • 1 1/2 c
    cherry tomatoes (halved)
  • 1 c
    diced cucumber (peeled and seeded)
  • 1/4 c
    diced red onion
  • 1 Tbsp
    olive oil
  • 3/4-1 tsp
    smoked paprika
  • salt and pepper to taste

How To Make grilled corn salad

  • 1
    Grill the corn on the cob, and then remove the corn. Add corn, cucumber, tomatoes, onion; then add olive oil, smoked paprika, and salt and pepper to taste. Serve immediately. You can also chill for about an hour for a light crispness.
