This is a very quick and easy salad. I love the flavor that grilling the corn adds, but if you can not grill you can add a can of corn. Goes great with a veggie burger or any burger for that matter.

Ingredients For grilled corn salad

1 1/2-2 cgrilled corn (about 2 ears)

1 1/2 ccherry tomatoes (halved)

1 cdiced cucumber (peeled and seeded)

1/4 cdiced red onion

1 Tbspolive oil

3/4-1 tspsmoked paprika

salt and pepper to taste
How To Make grilled corn salad

1Grill the corn on the cob, and then remove the corn. Add corn, cucumber, tomatoes, onion; then add olive oil, smoked paprika, and salt and pepper to taste. Serve immediately. You can also chill for about an hour for a light crispness.
