Green tomatoes are one of the first staple garden plants to come on. This is a take off on traditional fried green tomtoes. Very easy to prepare and makes a wonderful side dish.

Ingredients For green tomato casserole

5-6 mdgreen tomatoes (diced into 1-2 in chunks)

3 cbread crumbs (separated)

1/2 ccorn meal
-
1 cbuttermilk
-
1 lgegg
-
1 stickunsalted butter (separated, melted)

1/2 cparmesan cheese grated
How To Make green tomato casserole

1Preheat oven to 400. Melt 1/2 of a stick of butter in a 2 qt casserole dish and 1/2 of a stick of butter in a separate microwave safe cup

2Chop green tomatoes into 1-2 inch chunks. In a mixing bowl whip egg and buttermilk together. Add tomatoes to bowl and coat well

3Place 2 cups of the bread crumbs and corn meal in a gallon size bag, shake to mix, add tomato dices and shake to coat completely

4Add coated tomato dices to casserole dish and pour remaining melted butter over.

5Add remaining 1 cup of bread crumbs and. One meal, sprinkling over the top, then add Parmesan cheese, sprinkling over the top

6Bake for 30 min till golden brown on top and enjoy!!
