Green tomatoes are one of the first staple garden plants to come on. This is a take off on traditional fried green tomtoes. Very easy to prepare and makes a wonderful side dish.

Ingredients For green tomato casserole

  • 5-6 md
    green tomatoes (diced into 1-2 in chunks)
  • 3 c
    bread crumbs (separated)
  • 1/2 c
    corn meal
  • 1 c
    buttermilk
  • 1 lg
    egg
  • 1 stick
    unsalted butter (separated, melted)
  • 1/2 c
    parmesan cheese grated

How To Make green tomato casserole

  • 1
    Preheat oven to 400. Melt 1/2 of a stick of butter in a 2 qt casserole dish and 1/2 of a stick of butter in a separate microwave safe cup
  • 2
    Chop green tomatoes into 1-2 inch chunks. In a mixing bowl whip egg and buttermilk together. Add tomatoes to bowl and coat well

    Place 2 cups of the bread crumbs and corn meal in a gallon size bag, shake to mix, add tomato dices and shake to coat completely

    Add coated tomato dices to casserole dish and pour remaining melted butter over.

    Add remaining 1 cup of bread crumbs and. One meal, sprinkling over the top, then add Parmesan cheese, sprinkling over the top
