Ingredients For eggs in soy sauce

2 Tbspvegetable oil

1 smonion, finely sliced

1red chili pepper, seeded and sliced

1 clovegarlic, minced

1/2 tspfinely grated fresh ginger

1/2 tspdried shrimp paste

1 lgripe tomato, diced

1 Tbspwhite vinegar

1/2 tspsalt
-
1 Tbsppalm sugar

3 Tbspsoy sauce
-
1/2 cwater

4hard boiled eggs, peeled and halved
How To Make eggs in soy sauce

1Heat oil in a saucepan over medium heat and fry the onion, chili, garlic and ginger until onion is soft and starts to turn golden.

2Add shrimp paste and fry, mashing with the back of a spoon. Add tomato and cook until tomatoes is pulpy.

3Add vinegar, salt, sugar, soy sauce and water. Cover and simmer until sauce is thickened and smooth.

4Add egg halves and heat through.
