This was my PA Dutch grandmother's recipe as she lived with us and was the main cook till I moved out at age 21. She would of been 96 this year (2016).

Ingredients For dixie corn cakes (pancake like)

  • 1/2 c
    unsifted all-purpose flour
  • 1 tsp
    baking powder
  • 1/2 tsp
    salt
  • 1/2 tsp
    ground pepper
  • 2
    eggs, slightly beaten
  • 1/2 c
    milk
  • 2 Tbsp
    butter, melted and slightly cooled to not scramble the eggs
  • 1
    12oz. canned corn drained
  • 2 Tbsp
    onion, finely chopped
  • 1 Tbsp
    fresh parsley, chopped, or 1 tsp. dried parsley

How To Make dixie corn cakes (pancake like)

    Whisk together flour, baking powder, and salt and set aside. Combine eggs, milk, melted butter, corn, onion, and parsley. Stir in dried ingredients until batter is well blended.

    Lightly grease non stick griddle with butter. Use an ice cream scoop or 3 tblsp. and drop onto med/hot griddle. Fry until golden brown on each side. My grandmother would butter then before serving, others would drizzle maple syrup.
