1/2 cbulgur

1/2 cwater

1 Tbsptomato paste

1 Tbspolive oil

1 Tbsppomegranate molasses

1 Tbsplemon juice

1 mdtomato, chopped

1cucumber, peeled and chopped

1/2 canhearts of palm, drained and chopped

2scallions, chopped
-
2 Tbspfresh parsley, chopped

salt and pepper
How To Make cucumber & tomato bulgur bowl with hearts of palm

1Mix the bulgur with boiling water. Let sit until it absorbs all the water. Meanwhile, mix together the tomato paste, olive oil, pomegranate molasses and lemon juice. Set aside.

2Mix the tomato, cucumber and hearts of palm together. Stir in the green onions and parsley.

3Mix in the bulgur once cooled a bit. Pour the dressing over top and season with salt and pepper to taste.
