Ingredients For cucumber & tomato bulgur bowl with hearts of palm

  • 1/2 c
    bulgur
  • 1/2 c
    water
  • 1 Tbsp
    tomato paste
  • 1 Tbsp
    olive oil
  • 1 Tbsp
    pomegranate molasses
  • 1 Tbsp
    lemon juice
  • 1 md
    tomato, chopped
  • 1
    cucumber, peeled and chopped
  • 1/2 can
    hearts of palm, drained and chopped
  • 2
    scallions, chopped
  • 2 Tbsp
    fresh parsley, chopped
  • salt and pepper

How To Make cucumber & tomato bulgur bowl with hearts of palm

  • 1
    Mix the bulgur with boiling water. Let sit until it absorbs all the water. Meanwhile, mix together the tomato paste, olive oil, pomegranate molasses and lemon juice. Set aside.

    Mix the tomato, cucumber and hearts of palm together. Stir in the green onions and parsley.

    Mix in the bulgur once cooled a bit. Pour the dressing over top and season with salt and pepper to taste.
