cranberry sausage holiday stuffing
I've always disliked stuffing until one of my best friends shared her recipe and now I love making this every holiday. It's full of flavor and you can make it as a side to take to a holiday gathering.

2 pkgpepperidge farms cornbread stuffing mix

2 cchicken broth

1 cbutter or margarine

1 cred bell pepper, chopped

1/2 conion, chopped

1/2 ccelery, chopped

1 lbjimmy dean sausage, sage

2eggs, slightly beaten

1 tspdried marjoram

1/4 tsppepper
-
1 - 6 oz. pkgdried cranberries

1 cpecans, chopped
How To Make cranberry sausage holiday stuffing

1Prepare stuffing mix in a large bowl according to package directions, using chicken broth and ½-cup butter.

2In a medium size skillet, melt the remaining ½-cup butter. Add red pepper, onion, celery, pecans and dried cranberries; cook over medium heat until onion is tender. Add to stuffing.

3In same skillet cook sausage until well browned; add to cornbread mixture with pan drippings and remaining ingredients. Mix to blend well. Makes 10-cups.

4NOTE: This can be made a day ahead! Follow all directions but leave out the eggs until ready to stuff. You can also make it as a side dish or even in muffin tins to make individual servings.
