coffee baked beans
One morning we had a little coffee left in our coffee pot and I was planning to make baked beans for dinner. I thought, why waste the coffee? So I just tweaked my baked bean recipe a bit and came up with this combination. I paired it with roasted Brussels sprouts and seared salmon. It was a huge hit with my whole family!

Looking for a new baked beans recipe for the summer? These baked beans are really simple to make, perfectly baked, and have the right balance of flavors. They filled the Test Kitchen with the wonderful aroma that reminded us of a summer cookout. The bacon not only adds texture but a savoriness that mixes with the sweet. Since these beans are cooked uncovered, everything gets caramelized and the beans are not mush. The quantity is perfect if you're serving a family of four. If preparing for a cookout, or you have hungry teenagers in the house, double the recipe.
Ingredients For coffee baked beans

4 slicebacon, chopped

1sweet onion, chopped

28 ozbaked beans (1 large can)

1/4 cbbq sauce

1/4 cbrown sugar
-
1 Tbspapple cider vinegar

1 TbspDijon mustard

1/4 cbrewed coffee
How To Make coffee baked beans

1Preheat the oven to 350 degrees.

2Cook the chopped bacon in a pot over medium heat until browned (about 10 minutes).

3Remove the bacon with a slotted spoon, reserving the bacon grease in the pan. Drain the bacon on paper towels.

4Add the chopped onions to the pot with the bacon grease and cook for 15 minutes over medium-low heat, or until caramelized.

5Remove the pot from the heat. Add the bacon back to the pot as well as the remaining ingredients.

6Stir it all together.

7Pour the beans into a greased 8" baking dish and bake at 350 degrees for 2 hours.

8Remove the beans from the oven and let sit for 5 minutes before serving.
