Ingredients For chorizos con frijoles

  • 3 oz
    spanish chorizo, diced
  • 1 can
    black beans, rinsed and drained (15 ounce)
  • 1 Tbsp
    olive oil
  • 1/3 c
    chopped onion
  • 1 tsp
    minced garlic
  • 1/3 c
    diced fresh mild wax peppers, marconi peppers or other mild sweet garden peppers
  • 1 Tbsp
    tomato paste
  • 1 Tbsp
    balsamic vinegar
  • 1/2 tsp
    dried basil
  • salt and black pepper to taste
  • 1 lg
    fresh tomato, diced
  • 1/2 c
    water
  • 1 Tbsp
    chopped fresh cilantro

How To Make chorizos con frijoles

    Brown the sausage with the onion, garlic and diced peppers in olive oil.

    Stir in the beans, tomato paste, balsamic vinegar, basil, salt, pepper, tomato and water.

    Simmer for a few minutes until tomatoes soften a little and the beans thicken up. Stir in the cilantro.
