I was introduced to these by Dad's wife when they first met. I had never had them before but they are so yummy! Great with scrambled eggs on the side or any mexican dish!

Ingredients For chilaquiles

  • 2 Tbsp
    vegetable oil
  • 1 md
    onion, chopped
  • 1 pkg
    lawry's taco seasoning
  • 1 can
    diced tomatoes
  • 1 can
    green chiles (optional)
  • 6 oz
    tortilla chips
  • 4 c
    shredded monterey jack cheese
  • 1 c
    sour cream
  • 1/2 c
    shredded cheddar cheese

How To Make chilaquiles

    In Lg skillet, heat oil. Add Onion and saute over medium heat until tender. Add Taco seasoning, tomatoes & Chiles and mix well.

    Bring to a boil; reduce heat to low and simmer, uncovered, 10 to 15 mins, stirring occasionally.

    In lightly greased 2 quart casserole dish, layer 1/2 each of tortilla chips, tomato mixture and monterey jack cheese. Repeat layers; top with sour cream.

    Bake at 350 for 30 mins. Sprinkle with cheddar cheese and bake 10 mins longer. Let Stand 15 mins before cutting into squares.
