I was introduced to these by Dad's wife when they first met. I had never had them before but they are so yummy! Great with scrambled eggs on the side or any mexican dish!

Ingredients For chilaquiles

2 Tbspvegetable oil

1 mdonion, chopped

1 pkglawry's taco seasoning

1 candiced tomatoes

1 cangreen chiles (optional)

6 oztortilla chips

4 cshredded monterey jack cheese

1 csour cream
-
1/2 cshredded cheddar cheese
How To Make chilaquiles

1In Lg skillet, heat oil. Add Onion and saute over medium heat until tender. Add Taco seasoning, tomatoes & Chiles and mix well.

2Bring to a boil; reduce heat to low and simmer, uncovered, 10 to 15 mins, stirring occasionally.

3In lightly greased 2 quart casserole dish, layer 1/2 each of tortilla chips, tomato mixture and monterey jack cheese. Repeat layers; top with sour cream.

4Bake at 350 for 30 mins. Sprinkle with cheddar cheese and bake 10 mins longer. Let Stand 15 mins before cutting into squares.
