This is a recipe I came across in our local paper. This makes for a great dressing for the holidays.

Ingredients For chicken and cornbread dressing

4 to 6 chicken breast

1 cchopped celery
-
1 cchopped onions
-
1 bunchchopped green onions

1 cchopped bell pepper
-
1 stickbutter
-
2pans of cornbread
-
3slightly beaten eggs

1 1/2 canchicken broth
How To Make chicken and cornbread dressing

1Preheat oven to 350. Saute celery,onions,green onions, bell pepper in butter until onions are clear.

2Bake 2 pans of cornbread (according to directions). Set aside and let cool. Crumble cornbread in large bowl and add celery mixture.

3Boil chicken.Let cool, then shred chicken and add to cornbread mixture. You can add salt and pepper if desired. Stir in eggs and add chicken broth until it has consistency of oatmeal.

4Pour into a greased 9x13 casserole. Bake at 350 for 30 minutes. Top with your favorite giblet gravy or cranberry sauce.
