I love Cherry-Lime Rickey sodas at the soda fountain. The flavors inspired this avocado salad that can be served with warm flatbreads.

Ingredients For cherry-lime rickey avocado salad

  • 3 md
    avocados, peeled and pits removed.
  • 2/3 c
    chopped fresh burgundy (bing)cherries
  • 3 Tbsp
    finely minced seeded jalapenos
  • 1 Tbsp
    juice from burgundy cherry, mascerated
  • 1 tsp
    kosher salt
  • 3 Tbsp
    finely diced green onions

How To Make cherry-lime rickey avocado salad

    In a medium bowl,lightly mash one of the avocados. Dice the other two avocados and add to the bowl.

    To the bowl add the chopped cherries, minced jalapenos, cherry juice, salt and onions. Fold together lightly, cover and set in the refrigerator for 10-15 minutes to chill befoe serving.

    Place cherry-lime rickey avocado mixture in serving bowl or plate.
