Grits aren't just for breakfast! Although they are good then too. This recipe allows you to serve as a side at lunch or dinner too.

Ingredients For cheese grits

3 3/4 cwater

1/4 tspsalt

3/4 cregular grits, uncooked

2 csharp cheddar cheese, shredded, divided

1/4 cbutter

1 lgegg, beaten
How To Make cheese grits

1Combine the water and the salt in a saucepan. Bring to a boil. Stir in the grits; cover and reduce the heat. Simmer for 10 minutes, stirring occasionally.

2Add 1 1/2 cups cheese and the butter to the grits, stirring until the cheese and butter melts.

3Gradually stir a small amount of the hot mixture into the beaten egg. Add to the remaining hot mixture.

4Pour into a greased casserole dish and bake uncovered at 350 degrees for 45 to 50 minutes. Sprinkle the remaining cheese on top of the grits. Bake an additional 5 minutes or until the cheese melts. If you like spice sprinkle a little cayenne on top or serve with hot sauce.
