I've had this recipe in my homemade cook book for a long time . I think it came from a Pillsbury cookbook when you check out of the grocery line. You can make it for breakfast, brunch or a dinner side. Very tastie and definitely is a comfort food.

Ingredients For carolina brunch style grits

4 cwater

1 cuncooked quick cooking grits

11 ozcan of mexicorn whole kernel corn, red peppers, drained

9 ozpkg frozen spinach, thawed

1 1/4 oztaco seasoning mix

2 Tbspchopped onions
-
2 Tbspmargarine or butter

8 ozpkg (2 cups) shredded cheddar cheese or mexican shredded cheese
How To Make carolina brunch style grits

1Heat oven to 350F. cook grits in water as directed on package.

2In ungreased 13x9 inch baking dish, combine cooked grits and all remaining ingredients except 1 cup of cheese; mix well. Sprinkle with remaining cup of cheese.

3Bake at 350F for 22-27 minutes until edges are bubbly and cheese is melted.
