Ingredients For cajun skillet beans

1 mdonion, chopped

3 clovegarlic, minced

2 Tbspolive oil

3 stalkcelery, chopped (about 1 cup)

2green or red bell peppers, chopped (1 1/2 cups)

1 tspfresh thyme (1/2 teas. dried)

1 Tbspfresh basil (1 teas. dried)

1/4 tspblack pepper, or to taste
-
1 pinchsalt, or to taste

1 pinchcayenne pepper, or to taste

2 cchopped fresh tomato or 14 oz. canned tomato
-
1 Tbsphoney or molasses
-
1 Tbspdijon mustard
-
4 ccooked black-eyed peas or butter beans (20 ounce frozen or 2 16-oz cans, drained)

chopped green onion, garnish
-
grated cheddar cheese, garnish
How To Make cajun skillet beans

1Heat oil in heavy skillet and sauté onions and garlic until starting to soften.

2Add peppers and celery and continue to sauté for about 5 minutes, stirring occasionally.

3Add herbs and seasonings. Cover and cook for 5 minutes or until onions are golden. Stir occasionally.

4Add tomatoes, honey or molasses, and mustard. Simmer for 5 more minutes.

5Add beans, cover and stir occasionally until heated through. (10 - 20 minutes, depending if you use canned or frozen beans.)

6Top with scallions and cheese, as desired. Serve.
