Ingredients For broiled sherried tomatoes

4 lgripe firm tomatoes

1/4 cdry sherry

salt and pepper to taste

1 tspdried oregano

8 Tbspmayonnaise

1/4 cfreshly grated parmesan cheese
How To Make broiled sherried tomatoes

1Preheat oven to 350 F

2Cut tomatoes in half. Place cut-side up in a shallow baking dish. Prick with fork. Sprinkle with sherry, and let rest for a short time.

3Sprinkle cut tomatoes with salt and pepper to taste. Bake for 5 minutes, or to desired doneness, and remove from oven.

4Top the tomato halves with mayonnaise. Dust with the parmesan cheese. Turn oven to broil setting and broil until lightly browned. Serve immediately.
