I love beans...almost any kind, any way. This is my concoction, instead of buying the canned already refried beans. These taste better and have a better texture. These are EZ to do, and well worth the few extra minutes to make them. YUMMO!

Ingredients For blondie's refried black or pinto beans

3 Tbspevoo or canola oil, or lard
-
1/2 cminced yellow sweet onion
-
1 tsp(1 or 2 cloves) minced garlic
-
4 c*or* 2 cans black or pinto beans. do not drain
-
1 tspcumin
-
2 tspchile powder of choice (mexican, chipotle, etc.)
-
s & p to taste
-
water
- SERVE THIS WITH BLONDIE'S AUTHENTIC MEXICAN RICE, OR BLONDIE'S HEALTHY MEXICAN RICE. RECIPE IS IN 1ST POST BELOW**
How To Make blondie's refried black or pinto beans

1In a food processor pulse beans until smooth, or use potato masher. Set aside.

2In a medium saucepan on med-hi heat, add EVOO, canola oil or lard. Heat till shimmery. Add onions and saute` till translucent (about 2 minutes.) Now lower heat to med-lo and add garlic. Stir 1 minute.

3Add seasonings and stir well. Now add beans. Stir well. If beans are too thick, add water 1/4 cup at a time until desired consistency. Allow to cook, stirring occasionally till hot and ready to serve.
