Black beans are a delicious side to go with grilled meats. One of my childhood friend's dad was from Argentina and eating at their house was my first introduction to black beans. This recipe goes well over rice, too.

Ingredients For black bean pot - frijoles ollo

  • 1 Tbsp
    olive oil
  • 2 c
    onion, chopped
  • 3 clove
    garlic, minced or grated
  • 15 oz
    black beans (1 can) drained
  • 8 oz
    tomato sauce
  • 1
    tomato, seeded and diced
  • 1 tsp
    cumin
  • 1/4 tsp
    cayenne pepper ( or to taste)
  • 1/2 - 1 tsp
    adobo seasoning
  • 1/2 c
    cilantro, chopped (save some to garnish when serving)
  • 1/4 c
    green onions, chopped
  • salt and pepper to taste

How To Make black bean pot - frijoles ollo

  • 1
    Heat the olive oil in a large pot over medium-high. Add onions until they are translucent, about 5 minutes. Add garlic and cook for an additional 2 minutes.

    Add the black beans, tomato sauce, diced tomatoes, cumin, cayenne pepper and adobo; reduce heat to medium-low and simmer 5 minutes. Add 1/3 cup or so of the cilantro and simmer another 2 minutes. Stir in the green onions and remove from heat.

    Season with salt and pepper to taste. Garnish with remaining cilantro.
