I have been going through my recipe books and this is a good recipe that I thought should be shared. Enjoy.

Ingredients For barley onion pilaf

1 Tbspsmart balance spread

1 tspsalad oil

1 lgonion, halved lengthwise and sliced thin

3/4 cpearl barley, uncooked

1 2/3 csalt free chicken stock

chopped parsley

fresh ground pepper
How To Make barley onion pilaf

1Heat spread and oil in 4-qt saucepan over med-high heat. Add onion and cook, stirring often, until limp and golden-about 15 min.

2Add barley and cook, stirring, until lightly toasted-about 3 min.

3Add chicken stock and bring to a boil over high heat; reduce heat, cover, and simmer until barley is tender and liquid is absorbed-about 35 min.

4Stir in parsley and season to taste with pepper.
