Ingredients For baked sweet potatoes

  • 4 large oranges halved and hollowed out, set aside until needed
  • 3 large sweet potatoes, peeled, coarsely chopped
  • 1/2 cup fresh squeezed orange juice
  • 2 tbsp pineapple rum
  • 1 tsp baking powder
  • 1/4 cup strong kona coffee
  • 1/4 cup sugar, brown
  • 2 tbsp honey
  • 2 tbsp butter
  • salt and ground black pepper (to taste)
  • 1/3 cup macadamia nuts, coarsely chopped
  • 1/3 cup crushed pineapple, drained (no liquid) /
  • 1/4 teaspoon cinnamon, ground fresh
  • 1/8 teaspoon nutmeg, ground fresh
  • parsley, finely chopped (garnish)
  • toasted coconut, garnish (optional)

How To Make baked sweet potatoes

  • 1
    Add the sweet potatoes into a pot of water, add orange juice and boil until tender, drain and mash really well.
  • 2
    Place the warm potatoes in a large bowl and add all the ingredients making sure to mix well, after each addition.

    To serve: Fill the orange halves with the sweet potato mixture and garnish with parsley and toasted coconut.
