Ingredients For baked sweet potatoes

4 large oranges halved and hollowed out, set aside until needed

3 large sweet potatoes, peeled, coarsely chopped

1/2 cup fresh squeezed orange juice

2 tbsp pineapple rum

1 tsp baking powder
-
1/4 cup strong kona coffee

1/4 cup sugar, brown
-
2 tbsp honey
-
2 tbsp butter
-
salt and ground black pepper (to taste)

1/3 cup macadamia nuts, coarsely chopped

1/3 cup crushed pineapple, drained (no liquid) /

1/4 teaspoon cinnamon, ground fresh

1/8 teaspoon nutmeg, ground fresh

parsley, finely chopped (garnish)

toasted coconut, garnish (optional)
How To Make baked sweet potatoes

1Add the sweet potatoes into a pot of water, add orange juice and boil until tender, drain and mash really well.

2Place the warm potatoes in a large bowl and add all the ingredients making sure to mix well, after each addition.

3To serve: Fill the orange halves with the sweet potato mixture and garnish with parsley and toasted coconut.
